  • 1 large cucumber, chopped
  • 2 cups cherry tomatoes, halved
  • 1 red bell pepper, deseeded and chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 can chickpeas, rinsed and drained 15-ounce
  • 1/4 cup fresh parsley, chopped
  • 4 ounces feta cheese, crumbled optional

Lemon Herb Vinaigrette

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions
 

  • Prepare the Vegetables: In a large mixing bowl, combine the chopped cucumber, halved cherry tomatoes, chopped red bell pepper, thinly sliced red onion, Kalamata olives, and rinsed chickpeas. Add the fresh chopped parsley. If using, add the crumbled feta cheese at this stage.
  • Make the Vinaigrette: In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, garlic powder, salt, and black pepper until well combined and emulsified.
  • Combine and Serve: Pour the lemon herb vinaigrette over the vegetables in the large mixing bowl. Toss gently until all ingredients are evenly coated. Serve immediately and enjoy your quick and refreshing Mediterranean Salad.

  • Chill Your Veggies: For the crispiest Mediterranean Salad, ensure all your vegetables are well-chilled before assembly.
  • Fresh Lemon Juice is Key: Bottled lemon juice just won't cut it. Freshly squeezed lemon juice makes a huge difference in the vinaigrette's brightness.
