Ingredients
  

  • - 4 large egg whites at room temperature

  • - 1 teaspoon vanilla extract
  • - 1 tablespoon lemon juice optional

Instructions
 

  • Preheat the oven to 250°F (120°C). Line an 8-inch round cake pan with parchment paper.
  • In a large bowl, beat the egg whites using an electric mixer on medium speed until frothy.
  • Add the cream of tartar and continue to beat on high speed until soft peaks form.
  • Gradually add the sugar, 1 tablespoon at a time, while beating until stiff peaks form.
  • Add the vanilla extract and lemon juice, if using, and fold them in gently.
  • Pour the egg mixture into the prepared cake pan and smooth the top with a spatula.
  • Bake in the preheated oven for 1 to 1.5 hours, or until the cake is golden and firm to the touch.
  • Turn off the oven and let the cake cool in the oven with the door slightly ajar for 30 minutes to an hour.
  • Once cooled, gently remove the cake from the pan and peel off the parchment paper.
  • Serve with a dusting of powdered sugar, fresh fruit, or a dollop of whipped cream.
