Main Ingredients
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 1 large head green cabbage, shredded about 2 lb
- 1 green bell pepper, diced
- 1 can diced tomatoes, undrained 14.5 oz
- 6 cups vegetable broth low sodium preferred
- 1/2 teaspoon dried thyme optional
- Salt and black pepper to taste
- 1/4 cup fresh parsley, chopped for garnish
Prep Vegetables: Wash and chop all vegetables. Dice the onion, mince the garlic, slice carrots and celery, dice bell peppers, and thinly shred the cabbage. Prepare all ingredients before you start cooking.
Sauté Aromatics: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant. Add minced garlic and cook for another minute until aromatic.
Add Liquids & Remaining Veggies: Pour in the vegetable broth and diced tomatoes (undrained). Add the shredded cabbage and bell peppers. If using, add dried thyme. Bring the mixture to a boil, then reduce heat to low.
Simmer to Perfection: Cover the pot and let the Detox Cabbage Soup simmer for 20-30 minutes, or until the cabbage and other vegetables are tender. Stir occasionally to ensure even cooking. The longer it simmers, the more flavors meld.
Season & Serve: Season generously with salt and black pepper to taste. If desired, stir in fresh parsley just before serving. Taste and adjust seasonings as needed. Serve hot and enjoy your nourishing meal.
- For extra depth, roast some of the harder vegetables like carrots and bell peppers before adding them to the soup.
- Don't overcrowd your pot; cook in batches if necessary to ensure vegetables caramelize properly, building more flavor.
