Main Ingredients
- 2.5 lbs boneless, skinless chicken thighs or chuck roast, cut into 1.5-inch pieces
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, deseeded and chopped
- 1 cup chicken or beef broth low sodium
- 1 can diced tomatoes, undrained 14.5 oz
- 1 tsp dried Italian seasoning
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- Salt to taste
Optional Additions
- 1 cup sliced mushrooms
- 1 cup chopped zucchini
- 1/4 cup heavy cream or full-fat coconut milk for creaminess
- Fresh parsley, chopped, for garnish
Prepare Ingredients: Pat the chicken thighs or chuck roast dry with paper towels. Season generously with salt and pepper. If using chuck roast, you can optionally brown the meat in olive oil in a skillet before adding to the slow cooker for deeper flavor. Chop the onion, mince the garlic, and chop the bell pepper.
Combine in Slow Cooker: Place the seasoned chicken or browned chuck roast in the bottom of your slow cooker. Add the chopped onion, minced garlic, and chopped red bell pepper. Pour in the chicken or beef broth and the undrained diced tomatoes. Stir in the Italian seasoning and dried thyme.
Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the meat is fork-tender. If adding mushrooms or zucchini, stir them in during the last 30-60 minutes of cooking to prevent them from becoming too soft.
Finish and Serve: Once cooked, taste and adjust seasoning if necessary. If desired, stir in heavy cream or full-fat coconut milk for a richer, creamier sauce. Garnish with fresh chopped parsley before serving. Serve hot over cauliflower rice, zoodles, or a bed of spinach.
