  • 1 cup cooked chicken breast, shredded, or firm tofu, cubed, divided
  • 1/2 cup cucumber, diced, divided
  • 1/4 cup sunflower seeds or pumpkin seeds, divided

Layer 3: Leafy Greens

  • 4 cups mixed greens, divided spinach, kale, romaine

Instructions
 

  • Prepare the Dressing: In a small bowl or jar, whisk together the olive oil, apple cider vinegar, lemon juice, Dijon mustard, maple syrup (if using), dried oregano, salt, and pepper until well combined. This will be your vibrant base.
  • Layer the Dressing: Divide the dressing evenly among 4 (32-ounce) wide-mouth mason jars. This foundational layer is crucial to prevent sogginess, allowing ingredients above to remain crisp.
  • Add Hearty Vegetables & Grains: Next, evenly distribute the cooked quinoa or chickpeas, shredded carrots, and diced bell peppers into each jar, layering them directly on top of the dressing. These dense ingredients act as a protective barrier.
  • Include Protein & Healthy Fats: Carefully add the shredded chicken or cubed tofu, diced cucumber, and sunflower or pumpkin seeds to the jars. These layers add substance and nutrients.
