For the Steak Bites
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper, freshly ground
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
Prepare the Steak: Pat the steak cubes completely dry with paper towels. This is crucial for getting a good sear. Season generously on all sides with salt and pepper.
Sear the Steak: Heat the olive oil in a large cast-iron skillet or heavy-bottomed pan over high heat until it just begins to smoke. Carefully add the steak cubes in a single layer, ensuring not to overcrowd the pan (work in batches if necessary). Cook for 1-2 minutes per side, until a deep brown crust forms.
Make the Garlic Butter Sauce: Reduce the heat to medium-low. Add the unsalted butter to the skillet. Once it has melted, add the minced garlic and cook for about 30-60 seconds, stirring constantly, until fragrant. Be careful not to burn the garlic.
